Ingredients
Fish
- 4 x 150-180g (5-6 oz) fish fillets, about 1.5cm (1/2") thick, skinless and boneless
Sauce
- 50g (4 tbsp) unsalted butter
- 1/4 cup heavy/thickened cream
- 1-2 garlic cloves, minced
- 1 tbsp Dijon mustard
- 1 1/2 tbsp lemon juice
- Salt and pepper, to taste
- 1 1/2 tbsp eschallots (French onion), finely chopped
Garnish
- Fresh parsley
- Lemon slices
Instructions
- Preheat Oven: Preheat your oven to 200°C (390°F), suitable for all oven types.
- Prepare Fish: Place the fish fillets in a baking dish, making sure they are not crowded. Season both sides of the fish with salt and pepper evenly.
- Make Sauce: In a microwave-safe jug or bowl, combine butter, heavy cream, minced garlic, Dijon mustard, lemon juice, salt, and pepper. Microwave in two 30-second intervals, stirring in between, until the mixture is melted and smooth.
- Add Shallots and Sauce: Sprinkle the finely chopped eschallots over the fish. Pour the warm lemon cream sauce evenly over the fish fillets.
- Bake: Place the baking dish in the preheated oven and bake for 10 to 12 minutes, or until the fish is just cooked through and flakes easily with a fork.
- Serve: Remove the fish from the oven and transfer to serving plates. Spoon extra sauce from the dish over the fish, then garnish with fresh parsley and lemon wedges before serving.
Notes
- Note 1: Choose firm, white fish fillets such as cod, haddock, or tilapia, skinless and boneless, about half an inch thick for best results.
- Note 2: You can substitute heavy cream with half-and-half or a non-dairy cream alternative if preferred.
- Note 3: Eschallots are optional but add a mild onion flavor; replace with finely chopped shallots or green onions if unavailable.
