Description

This delightful Baked Brie recipe combines creamy brie cheese with a sweet and nutty topping of dried fruits, toasted pecans, and luscious butterscotch sauce. Baked to perfection, it’s garnished with fresh pomegranate arils and rosemary, making it an elegant and irresistible appetizer perfect for gatherings or cozy nights in. Served warm with crackers or sliced baguette, it offers a balance of rich, sweet, and tangy flavors.

Ingredients

Cheese

  • 8 oz brie with rind intact

Nuts

  • 1/4 cup pecans, chopped, salted, and toasted

Dried Fruits

  • 1/4 cup dried apples, chopped
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dried cranberries

Other Toppings

  • 1/3 cup butterscotch sauce (caramel sauce can be used as an alternative)
  • 1/4 cup pomegranate arils
  • Fresh rosemary for garnish (optional)

Serving

  • Crackers or sliced baguettes/french bread

Instructions

  1. Toast the Pecans: Chop the pecans and place them under a hot broiler for 30-60 seconds. Watch carefully to prevent burning. Once hot, sprinkle with a pinch of salt and set aside.
  2. Prepare the Oven and Brie: Preheat your oven to 350°F (175°C). Place the whole brie with the rind intact in a small cast iron pan or any oven-safe dish. Drizzle half of the butterscotch sauce over the brie.
  3. Add Toppings: Sprinkle the chopped dried apples, apricots, cranberries, and the toasted pecans evenly over the brie, allowing some to fall around the sides. Drizzle the remaining butterscotch sauce on top of the fruit and nuts.
  4. Bake the Brie: Bake in the preheated oven for 15 to 20 minutes, until the brie is soft and warmed through.
  5. Garnish and Serve: Remove from the oven, sprinkle with fresh pomegranate arils and garnish with a sprig of rosemary if desired. Serve immediately alongside crackers and/or sliced baguette or french bread.

Notes

  • Keep a close eye on pecans while toasting as they can burn quickly.
  • Substitute butterscotch with caramel sauce if preferred.
  • Serve warm for the best flavor and texture experience.
  • Use a cast iron pan or an oven-safe dish to easily transfer the brie in and out of the oven.
