Description

These Asian Turkey Lettuce Wraps are a quick and flavorful low-carb meal perfect for a light lunch or dinner. Ground turkey is sautéed with garlic and ginger, then mixed with crunchy water chestnuts and a tangy, spicy sauce made from hoisin, soy, rice vinegar, and chili paste. Served chilled in crisp Bibb lettuce leaves, they offer a delicious contrast of textures and vibrant Asian-inspired flavors in just 20 minutes.

Ingredients

Meat

  • 1¼ lb. lean ground turkey (or ground chicken)

Vegetables & Aromatics

  • 1 clove garlic, minced
  • 1/8 teaspoon ground ginger
  • 4 green onions, thinly sliced
  • 1 8 oz can sliced water chestnuts, drained and coarsely chopped
  • 12 Bibb/Butter lettuce leaves

Sauces & Seasonings

  • 1 tablespoon olive oil
  • 3 tablespoons hoisin sauce
  • 2 tablespoons lower-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons roasted red chili paste
  • Pinch of salt

Instructions

  1. Cook the turkey mixture: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey, minced garlic, and ground ginger. Cook for about 6 minutes, stirring frequently and crumbling the turkey until it is fully browned and cooked through.
  2. Combine the filling ingredients: Transfer the cooked turkey mixture to a large bowl. Add the thinly sliced green onions and coarsely chopped drained water chestnuts. Stir to combine the ingredients evenly and set aside.
  3. Prepare and add the sauce: In a small bowl, whisk together hoisin sauce, lower-sodium soy sauce, rice vinegar, and roasted red chili paste. Drizzle this sauce over the turkey mixture, then toss everything together thoroughly to coat all the ingredients evenly with the flavorful sauce.
  4. Assemble the lettuce wraps: Spoon about ¼ cup of the turkey mixture into each Bibb or Butter lettuce leaf. Serve immediately and enjoy the fresh, crisp, and savory wraps.

Notes

  • For a gluten-free version, ensure the hoisin and soy sauce are certified gluten-free.
  • Substitute ground chicken if preferred for different flavor and texture.
  • Adjust the amount of roasted red chili paste to taste for spiciness.
  • These wraps are best served fresh to maintain the crispness of the lettuce.
  • Can be made ahead by preparing the turkey mixture and sauce, then assembling just before serving.
