Description

Crispy and flavorful Air Fryer Zucchini Chips served with a refreshing mint yogurt dip. This easy and healthy snack features thinly sliced zucchini seasoned and air fried to perfection, paired with a cool, tangy dip made from Greek yogurt, fresh mint, and lemon juice. Perfect as a guilt-free appetizer or a light snack for any time of day.

Ingredients

Mint Yogurt Dip

  • ¼ cup Greek yogurt
  • ½ tablespoon finely chopped fresh mint
  • ½ tablespoon lemon juice
  • 1 pinch salt
  • 1 pinch black pepper

Zucchini Chips

  • ½ pound zucchini
  • ½ tablespoon extra virgin olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Prepare the Mint Yogurt Dip: In a bowl, combine Greek yogurt, finely chopped mint, lemon juice, salt, and black pepper. Stir well to mix all ingredients thoroughly. Taste and adjust seasoning if needed, then refrigerate until ready to serve.
  2. Slice the Zucchini: Using a sharp knife or mandoline slicer, slice the zucchini into thin rounds about ⅛-inch thick. Aim for uniform slices to ensure even cooking.
  3. Season the Zucchini: Place the zucchini slices in a mixing bowl. Add extra virgin olive oil, garlic powder, dried thyme, dried oregano, salt, and black pepper. Toss well to coat all slices evenly with the oil and seasonings.
  4. Arrange in Air Fryer: Lay the zucchini rounds in a single layer inside the air fryer basket or on the rack. Avoid overlapping or overcrowding. If necessary, cook in batches.
  5. Preheat Air Fryer: Set the air fryer to 400°F (200°C) and preheat for a few minutes.
  6. Air Fry the Zucchini: Cook the zucchini chips at 400°F for 15-20 minutes, flipping them halfway through the cooking time. Begin checking after the halfway mark and remove any chips that look too brown or crispy to prevent burning.
  7. Serve: Serve the zucchini chips warm or at room temperature alongside the chilled mint yogurt dip for a delicious and light snack.

Notes

  • Use a mandoline slicer for uniformly thin slices to ensure even crisping.
  • Do not overcrowd the air fryer basket to allow proper air circulation for crispy chips.
  • Check on chips frequently toward the end of cooking to avoid burning.
  • Zucchini chips can be served warm or at room temperature based on preference.
  • The mint yogurt dip can be made ahead and refrigerated for up to 24 hours.
