Ingredients
Refried Bean Layer
- 31 ounce can refried beans
- 8 ounces cream cheese (softened, optional)
- 3 Tablespoons taco seasoning (about 1 packet)
Middle Layers
- 14 ounces sour cream (about 1 1/2 cups)
- 16 ounces guacamole
- 1 1/2 cups chunky medium salsa (or substitute extra diced tomatoes)
Toppings
- 1 cup shredded cheddar cheese
- 3 roma tomatoes (diced and drained)
- 4 ounces sliced olives or jalapeños (1 can, drained)
- 1/4 cup chopped cilantro (optional)
- 1 bunch green onions (thinly sliced, optional)
- 1/2 lime (for juice, optional)
- Salt and pepper to taste
Instructions
- Prepare the Refried Bean Mixture: In a small bowl, stir together the refried beans, softened cream cheese (optional), and taco seasoning. To ensure a smooth blend, microwave the cream cheese for about 20 seconds beforehand if using.
- Layer the Beans: Spread the seasoned bean mixture evenly as the bottom layer in a 9x13 inch dish, trifle dish, or individual serving cups.
- Add Sour Cream and Guacamole: Spread 14 ounces of sour cream evenly over the bean layer, followed by 16 ounces of guacamole to create the next two layers.
- Top with Salsa: Spoon 1 1/2 cups of chunky medium salsa or extra diced tomatoes evenly over the guacamole layer.
- Add Cheese and Fresh Toppings: Sprinkle 1 cup shredded cheddar cheese over the salsa, then add the diced and drained roma tomatoes, sliced olives or jalapeños, chopped cilantro, and thinly sliced green onions.
- Finish and Season: Squeeze fresh lime juice over the top layers if desired, then sprinkle with salt and pepper to taste.
- Chill and Serve: Refrigerate the dip until ready to serve. This dip is best enjoyed the same day it is made. Serve chilled with fresh tortilla chips or Fritos for dipping.
